Guacamole
AvocadoLemon or lime juice (appx 1/2 lemon or lime per avocado)
Chopped coriander, spring onion, tomato (all optional)
(Exact measurements are not necessary).
Mash up the avocado with the juice. Mix in the coriander, onion, and tomato.
To maintain freshness, store the guacamole with the avocado stone in the bowl. It keeps it green. Serve with raw vegetables.
Braised Rice with Mushrooms
Makes 4 servings.
1 large onion, chopped
185g large flat mushrooms, sliced
4 shiitake mushroom caps, sliced
250g short-grain white rice
300-375ml skimmed chicken stock or water
220g peeled prawns, cut in half lengthwise
Salt (optional)
2 spring onions, chopped
2tbsp chopped fresh coriander
50ml olive oil
Coat a large non-stick frying pan with olive oil. Add the onions adn cook over medium-high heat, stirring for 3 minutes. Add the flat mushrooms and shiitake mushrooms. Cook, stirring for 3 minutes.
Add the rice, mixing well. Add 125ml of the stock or water. Cook, stirring, for 4 minutes, or until the liquid is absorbed. Add another 125ml stock or water. Cook for 4 minutes, or until the liquid is absorbed.
Add the prawns and 60ml of remaining stock or water. Cook, stiring occasionally, for 4 minutes, or until the rice is tender and the liquid is absorbed. Season to taste. Stir in the spring onions and coriander.
